Aristeon Jerk Chicken

Succulent jerk chicken and flavoursome cinnamon infused rice and beans, accompanied by zesty yogurt and side salad dressed in lemon olive oil.

INGREDIENTS
Chicken
- 2 spring onions
- 1 Cinnamon stick
- 250g of long grain rice
- 600ml of chicken stock
- 400g of black beans
Jerk Sauce
- 4 spring onions
- a small bunch of fresh thyme
- 3 fresh bay leaves
- ground cloves
- ground nutmeg
- ground allspice
- 6 tablespoons of rum / spiced rum
- 6 tablespoons of white wine vinegar
- 1 tablespoon of honey
- 1 scotch bonnet chilli
- 4 cloves of garlic
Salad
- 1 red pepper
- 1 cos or romaine lettuce
- 1/4 of a red onion
- a small bunch of coriander
- 1 punnet of cress
- 1/2 a cucumber
Seasonings
- Aristeon extra virgin olive oil
- Aristeon lemon infused olive oil
- Aristeon garlic infused olive oil
- salt & pepper
